Having a full plate for some students means they are maxed out on school, work, volunteering, family, extracurricular activities and social life. Phew! But for students in the UW-Stevens Point nutrition program, having a full plate is a good thing.

Added to senior Casey Mitchell’s plate was making recipes for the Wisconsin Potato and Vegetable Growers Association (WPVGA) Tantalizing Tailgating Wisconsin Potato Recipe contest. Other students, faculty and staff then sampled the recipes and evaluated the food products for taste, texture, etc. Mitchell also provided feedback regarding the food preparation procedure and made changes, if needed to correct or simplify each recipe.

The winning recipe was Potato Pizza Bites. Other top entries included Touchdown Tacos (pictured above) and Spicy Potato Wraps.

Those interested in potato recipes can enter the WPVGA’s upcoming Warm up with Wisconsin Potatoes Recipe Contest that begins on November 7, 2011.
